This clinical trial is studying a new method for measuring how well our bodies digest protein, specifically focusing on the amino acids that are essential for our health. Researchers want to see if this method, called the dual-isotope method, can accurately compare the digestibility of hen's eggs in healthy adults. They will do this by looking at the amino acids in the blood after participants consume eggs labeled with special forms of hydrogen and carbon, and compare this to a direct measurement from the digestive tract.
To be eligible for this study, participants must be healthy adults aged between 18 and 30 years, have a body mass index (BMI) between 18 and 30, and be covered by the French social security system. Women will need to be using birth control. Participants should not have any dietary allergies, certain health conditions (like diabetes or heart disease), or be taking certain medications. Those who join can expect to undergo some tests and provide blood samples, and they will need to give their written consent to participate. This study aims to improve our understanding of protein digestion, which could lead to better dietary recommendations in the future.

- Inclusion Criteria:

- • Healthy
- • Insured under the French social security system
- • For women: use of birth control
- • Signed informed consent
- Exclusion Criteria:
- • Any dietary allergy
- • Latex allergy
- • Positive serology to HIV, hepatite C virus antibody, hepatite B virus surface antigen and core antibodies
- • Gluten intolerance
- • Anemia
- • Use of drugs
- • High consumption of alcohol
- • Hypertension, diabetes, digestive disease, hepatic or renal disease, severe cardiac disease
- • Pregnancy
- • High sport practicing (\>7h/wk)
- • Blood donation in the 3 months prior to the study
- • Participation in a clinical study in the 3 months prior to the study
- • No signed informed consent
