The Gfree clinical trial is studying how reducing wheat gluten in our diets can help improve blood sugar control and reduce inflammation in both healthy individuals and those with diabetes. Participants, including healthy volunteers, parents, children, and adults, will eat a variety of gluten-free foods as well as foods that contain gluten. The researchers want to find out if cutting down on gluten and certain amino acids found in wheat can lead to better blood sugar levels and lower inflammation. They will also explore if taking gluten with probiotics (helpful bacteria) makes any difference.
This trial is open to everyone aged 2 years and older, as long as they do not have celiac disease, which is a serious condition triggered by gluten. Participants can expect to try different types of food and help researchers learn more about how diet affects blood sugar and inflammation.
