This clinical trial is studying the effects of a special cooking class series called the Mad Dog Cooking Class, designed for individuals with spinal cord injuries (SCI) or multiple sclerosis (MS). The goal is to help participants learn about and follow a healthier anti-inflammatory diet that can improve their eating habits, boost their confidence in cooking, and potentially reduce symptoms of depression. The cooking series includes weekly classes where participants will learn how to prepare meals that are not only tasty but also beneficial for their health.
To be eligible for this study, participants must be at least 18 years old, fluent in English, and have been diagnosed with either SCI or MS for at least one year. Throughout the six-week program, participants will engage in cooking demonstrations, learn about the advantages of an anti-inflammatory diet, and get hands-on experience with kitchen tools that can make cooking easier. This trial aims to see how satisfied participants are with the cooking series and whether it helps them stick to the diet over time, as well as its impact on their mood.

Eligibility criteria
- Inclusion Criteria:
- • To be eligible for this study, participants are required to be over 18 years of age, fluent in English and at least one year removed from either spinal cord injury (SCI) or diagnosis of multiple sclerosis (MS). Participants with SCI can have any level or severity of injury while participants with MS can have had any type of MS.
- Exclusion Criteria:
- • Younger than 18
- • Not fluent in English
- • No SCI or diagnosis of MS
