The Potato Diet Intervention Study is looking at how a diet based mainly on potatoes affects the health of Chinese university students. Over the course of 8 weeks, participants will either follow the potato-based diet or a regular diet, and researchers will measure changes in health markers like waist size, blood pressure, blood sugar, and cholesterol levels. Additionally, the study aims to understand how this diet might influence gut health and how it interacts with each person's unique metabolism.
To be eligible for this study, participants must be university students and should not have certain health conditions like diabetes or heart disease, nor should they smoke or consume large amounts of alcohol. Those who have taken specific medications or supplements, had recent surgery, or participated in other clinical studies in the past three months will not be able to join. If selected, participants can expect to be part of a research effort that could provide valuable insights into nutrition and health for young adults.

Eligibility criteria
- Inclusion Criteria:
- • University students at school
- Exclusion Criteria:
- • Smoking (≥1 cigarette/week);
- • heavy alcohol consumption (\>224 g/week for men and \>168 g/week for women);
- • diabetes, heart disease, stroke, high blood pressure, liver dysfunction, kidney dysfunction, or gastrointestinal disorders;
- • taking dietary supplements (e.g., vitamins, minerals, probiotics, or prebiotics);
- • taking medications (e.g., aspirin, statin, or antihypertensive medications);
- • within the past 3 months taken antibiotics;
- • had surgery in the past 3 months;
- • participated in other clinical studies in the past 3 months;
- • preference for fried and baked foods.
