This clinical trial is studying how different people react to the same foods, particularly in terms of blood sugar levels after eating. Researchers will use continuous glucose monitors, which are small devices that track blood sugar in real-time, to see how individuals respond to various meals and drinks. The goal is to find out how different types of food—like those high in fiber or certain ingredients—can help manage blood sugar levels better for different people. This information could eventually lead to personalized dietary recommendations based on a person's unique body chemistry.
To participate in this study, you should be between the ages of 18 and 75, have a body mass index (BMI) between 19 and 45, and have stable blood sugar levels (measured by a test called HbA1c) without taking diabetes medications. It’s important that you can travel to the Stanford campus for study visits. Some individuals, such as those with recent heart problems, active cancer, or certain other health conditions, may not be eligible. If you join, you can expect to wear a glucose monitor and learn more about how your body reacts to different foods, which could help you make better choices for your health.

Eligibility criteria
- Inclusion Criteria:
- • BMI (body mass index) \>19 kg/m2 but \< 45 kg/m2
- • HbA1c \< or equal to 7.0% while not on antihyperglycemic medications
- • Be willing to provide written informed consent for all study procedures.
- • Able to commute to Stanford campus for on-site visits
- Exclusion Criteria:
- • recent (\<6mos) CVD (cardiovascular disease) event
- • active malignancy
- • kidney/liver disease
- • pregnancy/lactation
- • chronic inflammatory disease
- • eating disorder
- • bariatric surgery
- • history of acute pancreatitis
- • current use of antihyperglycemic, diabetogenic, or weight loss medications
- • heavy alcohol use
- • physical activity \>2 hours/day
- • inability to come to Stanford CTRU (Clinical and Translational Research Unit) for metabolic testing
